Making Mixto the right way.

Tequilas that are not made with 100% Agave are termed 'Mixto Tequila' - and they get a bad rap. We embrace the label because when done right, they're game-changing. Conscious production processes that honour the craft of traditional Tequila making.

Fully matured Agave, aged for 9 years

We allow our Agave plants to fully mature, ensuring that crop levels are sustained and that plants are able to cultivate. A percentage of our crops are allowed to flower and produce the next generation of crops. Protecting Agave stocks is vital to the natural ecosystems of local pollenating wildlife, such as Agave bats.

Extracting Agave sugars properly

We use hornos (traditional brick clay ovens) and autoclaves to cook our Agave. They are by far the most eco-friendly method and produce the highest quality Tequila. We are passionately anti-diffusers (a mass method of extracting sugars from under-ripe Agave) and always will be.

Composting to operate with 0% waste

Spent materials from the production process are donated to local farmers for agriculture and used to cultivate new Agave with our distillery partner. Nothing goes to waste.
